Baking Right Tonight with Martha White!  I've never had good luck with pie crust. Oh it tastes good, it just never rolls out right.  I just kept at it tonight, and finally just smooshed it together in the pan, so there were no holes, and it worked. :-)

Herb was SUPPOSE to have picked up Lemon Pudding, however, I baked the crust, and opened what I thought was lemon pudding, and it was Lemon Jello!!  SO, I quickly found a recipe for homemade lemon pudding. Never made it before in my life, but I can safely say it was delicious, cause I ate all the leftover pudding while I was waiting for the meringue to bake. :-)  Now I'm heading to Greentop to deliver pie to Mom. 

Here's a few photos. Haven't made meringue in years, so I hope it baked up right. Really didn't find a way to check that, so I just took it out of the oven once it started to brown.

Lemon Pudding Recipe

Ingredients

3/4 cup sugar
1/4 cup cornstarch
2 1/2 cups milk
3 large egg yolks, lightly beaten
Pinch salt
1/2 cup fresh lemon juice
2 tablespoons unsalted butter, at room temperature

Directions

Whisk the sugar and the cornstarch together in a medium saucepan. Add the milk and whisk until smooth. Add the egg yolks, zest, and salt and cook, stirring frequently at first and constantly towards the end, over medium heat until thickened enough to thickly coat the back of a spoon.

Remove the pan from the heat and stir in the lemon juice and butter.

it really looked delicious I almost cried, this was my Dad's favorite pie; he had to have one Christmas as well as Thanksgiving. My mother could bake oh my I have never mastered her style,but close. My mother cooked with Martha White/seemed like it taste so much better then; I know your taste buds change when you grow older but those biscuits were out of this world when she made them when I was a child.
